Do you ever have those days when you don’t feel like cooking an elaborate meal? Do you ever have those days when you ignore calories and just want some comfort food?
Okay, so all of the above applies to me a lot! I have a recipe that’s quick and easy and involves one of my favorite snack foods…Doritos.
This Doritos taco salad literally takes about 20 minutes to prepare, and you only need a few ingredients. I sometimes call these Doritos nachos too. You can eat it like you would eat regular nachos or you can crush the Doritos up which is typical with most Doritos taco salad recipes.
I have very picky eaters in my family, so no one in my household eats this but me. I’m sure your family is not as picky! This would be a great dish for your family on game night or a busy evening after school and sports activities. And of course, you can always add or take away ingredients. Here’s my version of Doritos Taco Salad

1 16 oz. can pinto beans
1 15 oz. can black beans
1 10 oz. can Rotel, mild)
1 25 oz. can Hormel chili, no beans
1 bag of Doritos, nacho cheese flavor
1 16 oz. bag of finely shredded cheese, fiesta blend
1 8 oz. bag shredded iceberg lettuce
I have not measured out the number of servings exactly, but it makes about 6 servings. If you want a large batch, double the ingredients.
Remember, you can modify the ingredients however you see fit. If you hate black beans, don’t put them in. If you want to add corn (I can’t because of darn food allergies), then go for it. Either way, I sure hope you use the Ibotta app when you shop for these groceries so you’ll earn some cash back!
1.Pour the beans, Rotel, and chili in a medium-sized pot. Mix well.
2. Warm the ingredients on medium heat for 10-15 minutes. Everything is already cooked, so you just want to make sure it is warmed through.
3. Remove the pot from the heat.
4. Put the Doritos in a bowl. I like to smash mine first.
5. Pour your chili mixture on top of your Doritos. Top with lettuce and cheese.
